Cream Cheese Mints
8 oz of Cream Cheese (softened)
3/4 teas. Extract of Peppermint (we used peppermint oil)
2 cups + Powdered Sugar
food coloring (optional)
After mixing cream cheese and peppermint, slowly add powdered sugar until consistency is like dough. Roll into small balls. After rubbing butter or shortening lightly into the candy mold S with a paper towel, dip the candy balls into granulated sugar and press into the mold S. After you have "shaped" the mints to your desire, carefully lift the candy mints out of the mold and place on wax paper for approximately 1/2 hr. Store candies on the wax paper in a cake pan and refrigerate until it's time serve.
