Toffee Candy Crunch
Just like Heath Bar, add toffee crunch flavor to your candy
Chunks of toffee. Add to milk
chocolate and dark chocolate, let set, break into
pieces, YUM!

A Note About Toffee Candy Crunch

Heath Bar - oh yeah! You've gotta love that
crunchy perfect toffee flavor. I love toffee; it's a smoky
flavor that I can't even describe. I love to add the
toffee crunch
to the basic
ganache recipe and then dip in chocolate for a toffee truffle. I guess I'm not the only one who loves it.
One of my favorite stories from our hands-on classes
happened very
recently.
This class happened to be with one of my
close friends and I was demonstrating the usual
candies, truffles,
turtles, molded chocolate, and similar candies. I
met some great
people that night. One woman stuck out in my mind. She had a bag
of the toffee candy crunch in her hand and a puzzled look on her
face. I was busy helping other people and answering questions. I
noticed in a few minutes that she was still there,

in hand. I finally asked her if I could help her with something
or if she had a question. She woke out of her trance
and said, "Oh!
I KNOW I want some of this toffee, my question is how much?"
She went on to ask for some ideas and recipes that she could use
with her new found love. That lady's mind was working overtime!
I've gathered some recipes and ideas using this toffee
candy crunch.

Chocolate Mousse Cake with
Toffee Crunch Topping
Ingredients:
* Frozen pound cake
(10-3/4-oz pkg.),
thawed and crumbled into large pieces
* Chocolate pudding from Jell-O. Prepare according to directions on package.
* 2 cups (1 pt.) cold whipping cream
* 2 teaspoons vanilla
* Toffee Candy Crunch
Directions:
1. Mix chocolate pudding, vanilla, and whipping
cream together to make the 'mousse.'
2. Layer crumbled cake and
mousse into
several layers.
3. Top with toffee
crunch.
Refrigerate at least 60
minutes before
serving.

White Chocolate Toffee
Truffles
1 bag (12 ounces) chopped white
chocolate
1/4 cup heavy whipping cream
1/2 teaspoon Madagascar bourbon vanilla
1/2 cup Toffee Candy Crunch
Place white
chocolate in small bowl and microwave in 30-second
intervals to avoid scorching. Pour in the heavy whipping cream
that has been brought to room
temperature. Stir in
vanilla. Cover. Refrigerate 1 hour.
Using the truffle scoop, scoop into small balls. Roll them in
your hand to make them a nice round shape, and dip into toffee candy
crunch. Place in
refrigerator
until
firm, about 30 minutes.
Store tightly covered in refrigerator up to 3
weeks. Serve
chilled
or let stand at room
temperature 15 to 20 minutes
before serving. |
