Note: A natural process called "blooming" takes effect on the Guittard molding chocolate with change in temperature. Blooming looks like white streaks, but is a natural process of the sugar separating from the chocolate and it will remedy itself when melted and it does NOT effect the flavor. Chocolate is shipped at customer's risk during hot weather. May melt some in shipping, but this does not effect the flavor. May be remelted over and over again.

MicrowaveTips for melting Guittard chocolate - Microwave Guittard molding chocolate at 30-second intervals using microwave safe bowls, stirring in-between to distribute the heat in order to avoid scorching the chocolate. Keep chocolate at a constant temperature to produce a smooth professional look. You can purchase a griddle, or use your stove top and frying pan. Lay two towels on the pan or griddle before placing the chocolate filled plastic bowl.

White Chocolate Dipped Strawberry Recipe

Chocolate Dipped StrawberryMake oh-so-beautiful white chocolate dipped strawberries.

Melt some white vanilla chocolate in the microwave in 30-second intervals to avoid scorching. Make sure the strawberries are washed and dried thoroughly. Grab the strawberry by its leaves and dip into the melted chocolate rolling carefully from side to side to leave a nice 'V' in the middle of the strawberry with no chocolate on it. To make it even more beautiful add pink coloring to some white chocolate and drizzle it over the strawberry or drizzle with milk chocolate.

White Chocolate Truffles


1/3 cup heavy whipping cream
1 tsp. fresh grated lemon rind
8 oz. white chocolate, chopped
1 tablespoon unsalted butter
1/2 tsp. vanilla
12 oz. white chocolate, melted for coating

In medium-size saucepan, heat cream and lemon rind until mixture begins to simmer. Remove from heat, stir in chopped white chocolate. Let stand 5 minutes. Add butter and vanilla, stir until smooth. Refrigerate and cover for 2 hours. Using truffle scoop, scoop mixture onto waxed paper. Roll into balls. Dip into melted white chocolate.

Chill, covered, for at least 2 hours.

Place truffles in a single box, a triple truffle box, or a clear oval box that holds 4 truffles.
Makes 24 truffles
